Microwave Peanut Brittle

Procedure:  
In a 2 quart Pyrex bowl, mix (using a wooden spoon)1 cup of sugar and 1/2 cup of light corn syrup. Place in the microwave oven for 4 minutes on high. Using hot mitts, remove the bowl and add 1 cup of roasted peanuts (I use dry roasted). Stir in the peanuts. Return the bowl to the oven and heat 4 more minutes on high. (the mixture should look golden brown) Remove with hot mitts. Add 1 teaspoon of butter and 1 teaspoon of vanilla extract. Mix. Return to the oven and heat for 1.5 minutes on high. Remove with hot mitts. Add 1 teaspoon of baking soda. Mix. When the mixture is light and foamy, spread onto a piece of aluminum foil to cool. (10-20 min.) Break into pieces and eat.
